For the holidays we're posting a recipe from our good friends at Liechtenstein Tourism. They recently featured the easy-to-bake "Liachtaschtaanerli" (Little Liechtensteins) cookies. So roll up your sleeves, invite the kids into the kitchen, turn on some holiday tunes and enjoy some family baking fun!
Pro tip: Use a digital scale that converts to grams for best results.
Ingredients (for 20 - 50 pieces)
- 150g wheat flour (all purpose flour)
- 1/2 tsp baking powder
- 50g sugar
- 1 pack vanilla sugar (alternative: 1.5 tbsp sugar and 1/2 tsp vanilla extract)
- 100g butter
- lemon zest
For decoration
- 100g sugar
- 2 tsp water
- 2 tsp lemon juice
- sugar pearls
Prepare
Preheat oven to top/bottom heat about 180° Celsius (roughly 350° Fahrenheit)
Prepare the dough
Mix flour with baking powder in a mixing bowl.
Add remaining ingredients and mix everything with a mixer first, briefly on lowest, then on highest speed to form a dough, then shape into a ball.
Roll out the dough to about 1/2 cm thick (about 1/4 inch) on floured work surface, cut out designs, place on baking tray and bake.
Baking time: about 12 min.
Decoration
Gradually mix powdered sugar with just enough water and lemon juice to make a thick icing.
Color some of the icing with food coloring to taste.
Coat the cookie cutters with the icing and decorate with pastry decorations and sugar pearls.
